5 Easy Whisky Cocktails You Can Make at Home

Let me be honest — I used to think cocktails were this whole complicated thing. Like you needed a proper bar setup, sixteen different tools, and some bartender instinct that only comes from years behind a counter. So for the longest time, whisky at home just meant whisky neat or whisky with ice. Which is great, don’t get me wrong. But one night I tried making an Old Fashioned on a whim, with whatever I had in the kitchen, and it came out actually really good. That was kind of a turning point.

The truth is, most of the best whisky cocktails in the world are dead simple. Three or four ingredients, maybe five minutes of your time. No shaker required for some of them. And once you know what you’re doing, you’ll be making drinks that taste like they came from a proper cocktail bar — except you’re in your kitchen, and it costs a fraction of the price.

So here are five whisky cocktails I think anyone can pull off at home, whether you’re a total beginner or just looking to branch out from your usual pour. I’ve tried to keep the ingredients list realistic — things you can actually have on hand without running a full home bar.

Quick tip before you start

that doesn't mean expensive. A solid mid-range bottle will absolutely do the job. If you're shopping for something to use in cocktails, check out the full whisky range at Liquor Club NZ — there's something at every price point.

1. Classic Whisky Sour

Classic Whisky Sour

If you’re going to start somewhere, start here. The Whisky Sour is probably the most beginner-friendly whisky cocktail there is, and it’s genuinely delicious. It’s bright, citrusy, a little sweet, and the whisky still comes through really clearly. People who think they don’t like whisky often come around after trying one of these.

What You’ll Need (serves 1):

  • 60ml Bourbon Whiskey (or a blended Scotch works too)
  • 30ml fresh lemon juice (please, use fresh — not the bottle stuff)
  • 20ml simple syrup (sugar + water, equal parts, stirred together)
  • 1 egg white — optional but makes the texture silky and luxurious
  • Ice
  • A cherry or lemon slice to garnish

How to Make It:

  1. If you’re using egg white, do a “dry shake” first — add all ingredients without ice and shake hard for about 15 seconds. This builds the foam.
  2. Add ice to the shaker and shake again for another 15–20 seconds until it’s really cold.
  3. Strain into a glass over ice (or a chilled coupe glass without ice for a more elegant look).
  4. Garnish and serve immediately.

Bottle tip

Bourbon is the classic choice here, but an Irish whiskey makes it a little softer and more approachable if that's your thing. The Glenlivet 12YO also works surprisingly well — its natural sweetness balances the lemon without needing much added syrup.

2. The Old Fashioned

This one has been around since the 1800s, and honestly, it hasn’t needed updating. The Old Fashioned is the cocktail for people who want to actually taste the whisky — it’s not hiding behind a bunch of mixers. Just whisky, a little sweetness, some bitters, and a big orange peel. That’s it.

What I love about this one is that it rewards a good bottle. You don’t need the most expensive thing on the shelf, but you do want something with real character. A quality single malt Scotch or a smooth bourbon really shines here.

What You’ll Need (serves 1):

  • 60ml whisky — bourbon or rye is traditional, a Speyside Scotch works beautifully too
  • 1 teaspoon simple syrup (or half a sugar cube)
  • 2–3 dashes Angostura bitters
  • A wide strip of orange peel
  • Large ice cube (1 big cube is better than lots of little ones — melts slower)

How to Make It:

  1. Add the syrup and bitters to a heavy-bottomed glass. Stir briefly.
  2. Add the whisky and a large ice cube.
  3. Stir gently — about 20–30 rounds — you want it cold and slightly diluted, not watery.
  4. Take your orange peel, hold it skin-side down over the glass, and give it a firm twist to release the oils. Run the peel around the rim, then drop it in.

Bottle pick

The Balvenie 12YO Doublewood is a personal favourite for this cocktail — it has this warm honeyed thing going on that plays perfectly against the bitters. The Macallan 12YO Double Cask is another brilliant choice, especially if you want something richer.

3. Whisky Highball (With Ginger Beer)

Whisky Highball (With Ginger Beer)

Sometimes you just want something refreshing. Long, cold, easy to drink. The Highball is that drink. It’s barely even a recipe — it’s just whisky and a sparkling mixer over ice — but when you get the ratio right, it’s genuinely satisfying in a way that’s hard to explain. The Japanese have been perfecting this for decades, and there’s a reason it’s become such a popular way to drink Scotch around the world.

For a slightly spicier, more interesting version, try ginger beer instead of soda water. The ginger plays off the grain flavours in the whisky in a really pleasant way.

What You’ll Need (serves 1):

  • 45–60ml whisky (a blended Scotch is ideal here — lighter body, great with fizz)
  • 150–180ml cold ginger beer (or plain soda water for a more traditional Highball)
  • Lots of ice — the glass should be nearly full of ice before you pour
  • A slice of fresh lemon or lime

How to Make It:

  1. Fill a tall glass right to the top with ice.
  2. Pour in your whisky.
  3. Slowly pour the ginger beer down the side of the glass — this preserves the bubbles.
  4. Give it one very gentle stir, add your citrus slice, and that’s it. Done.

Pro tip

Chill your glass in the freezer for 10 minutes before making this. It makes a bigger difference than you'd expect. Also — the bubbles go flat fast, so drink it while it's still alive.

4. The Rob Roy

The Rob Roy

Think of the Rob Roy as the Scotch version of a Manhattan. It’s rich, a little sweet from the vermouth, and it has this real depth of flavour that makes it feel like a proper grown-up drink. It was invented in New York in the 1890s, named after a Scottish folk hero, and it’s been quietly underrated ever since. More people should be drinking these.

The key ingredient you might not usually keep at home is sweet vermouth — but it’s worth picking up a bottle. It’s not expensive, it keeps in the fridge for a few weeks, and it unlocks a whole other set of cocktails once you have it around.

What You’ll Need (serves 1):

  • 60ml Scotch whisky — a Speyside or Highland malt works especially well
  • 30ml sweet (rosso) vermouth
  • 2 dashes Angostura bitters
  • Ice for stirring
  • A maraschino cherry or lemon twist to garnish

How to Make It:

  1. Fill a mixing glass (or any glass) with ice.
  2. Add your Scotch, vermouth, and bitters.
  3. Stir steadily for about 30 seconds — you want proper dilution here, so don’t rush it.
  4. Strain into a chilled coupe or martini glass.
  5. Drop in a cherry or add your lemon twist and serve.

Bottle pick

The Glenfiddich 12YO is a natural fit for this — its pear and apple notes cut through the vermouth in a really elegant way. If you want something with a bit more weight, try the Glenlivet Captain's Reserve.

5. Hot Toddy

Hot Toddy

Right, and for our final one — something a bit different. The Hot Toddy is winter in a glass. It’s warming, it’s soothing, and it somehow makes you feel better just holding the mug. Whether you’ve had a long day, it’s raining outside, or you’re fighting off a cold — this is the cocktail for that moment.

It’s also probably the easiest drink on this entire list. You’re basically making a warm whisky tea with honey and lemon. There’s really nothing to it, but somehow it always hits exactly right.

What You’ll Need (serves 1):

  • 50ml whisky — Irish whiskey is traditional and gorgeous here, but any good whisky works
  • 200ml hot water (not quite boiling — around 80°C is ideal)
  • 1 tablespoon good quality honey
  • Juice of half a lemon
  • Optional: a cinnamon stick, 2 cloves, or a slice of fresh ginger for extra warmth

How to Make It:

  1. Add the honey and lemon juice to a mug and mix briefly.
  2. Add the whisky.
  3. Pour in the hot water and stir until the honey is fully dissolved.
  4. Drop in your spices if using, and let it sit for a minute before drinking.

A small note

Don't use boiling water — it kills the subtler aromas in the whisky. Let the kettle sit for a minute or two first. You'll taste the difference.

Final Thoughts

Honestly, the biggest barrier to making cocktails at home isn’t skill — it’s just not having tried. Once you’ve made one or two of these, you’ll realise how straightforward it actually is. And you’ll start seeing your whisky bottle a little differently, not just as something to sip neat (which is also great), but as an ingredient with a lot of possibilities.

Start with whichever one sounds most appealing to you. The Highball if you want something completely effortless. The Old Fashioned if you want to feel a bit fancy. The Hot Toddy if it’s winter and you just need something cosy. They’re all good entry points.

And if you need a bottle to get started — or you want to try something new — the team at Liquor Club NZ has a solid range of whiskies available for delivery across New Zealand.
