Start with the letters: VS means the youngest spirit in the blend is at least two years old, while VSOP requires four and XO ten. What does XO mean on cognac?

XO stands for Extra Old, and the youngest brandy in the blend must be aged for at least ten years. XO cognacs are richer and more complex, with notes of leather, dried fruit, nuts and spice. They are usually sipped neat and are a popular choice for gifts and special occasions.

How should I serve cognac?

Serve older cognac neat in a tulip glass at room temperature, letting it sit a minute to open up. A few drops of water can lift the aroma. VS cognac also suits highballs with ginger ale or tonic, and classic cocktails like the Sidecar and French 75.

How long does cognac last once opened?

An opened bottle of cognac stays in good condition for a year or more if it is sealed tightly and stored upright, away from heat and light. Cognac does not age further in the bottle. Once the bottle is less than half full, the flavour fades faster, so finish it within a few months.
