What is the difference between white, gold and dark rum?

The difference is mostly ageing and colour. White rum is unaged or filtered clear and suits cocktails, gold rum spends some time in oak for light vanilla notes, and dark rum is aged longer or blended with caramel for a richer molasses flavour. Spiced rum adds spices on top.

What is rum made from?

Rum is made from sugarcane, either from molasses left over from sugar production or from fresh cane juice, as in rhum agricole and cachaca. The liquid is fermented, distilled and then bottled clear or aged in barrels, often ex-bourbon oak casks, to build colour and flavour.
