Dark rum is aged longer in oak barrels, which gives it a deep colour, richer molasses flavour and notes of vanilla, caramel and spice. White rum is unaged or filtered clear after ageing, so it tastes lighter and cleaner and is mainly used in cocktails like mojitos and daiquiris.

What mixes well with dark rum?
