This Cabernet opens with intense blackcurrant, choc mint and fresh-cut cedar on the nose. The palate is plush and vibrant, offering fruitcake, plum, rum and raisin flavours alongside dark chocolate, liquorice and hints of black pepper and spice. Fine tannins provide structure, while the finish shows excellent persistence with lingering dark berry notes.

This wine comes from the Coonawarra region in South Australia, one of the country's most celebrated districts for Cabernet Sauvignon. The region's famous terra rossa soils and cool climate produce wines with concentrated fruit character and fine-grained tannins. This structured Cabernet pairs beautifully with rare-cooked beef ribeye, slow-braised lamb shanks, or venison. The fine tannins and dark fruit flavours also complement aged cheddar and other hard cheeses. Rich, protein-based dishes with caramelised or charred elements will highlight the wine's plush palate and persistent finish.

Look to hearty red meat preparations like char-grilled steaks, roasted lamb leg with rosemary, or beef bourguignon.
