Balblair 12YO is a Highland single malt Scotch whisky from Balblair distillery at Edderton, in Ross-shire north of Inverness. It is aged for at least 12 years in American oak, both ex-bourbon casks and double-fired casks, and bottled at 46% ABV with natural colour and no chill filtration.

Balblair traces its roots to 1790, the date printed on its label. Inver House Distillers has owned it since 1996. Production is small, run through just one wash still and one spirit still. The 12 year old is the entry point to the age statement range, with older 15, 18 and 25 year old bottlings above it. Every cask in this recipe is American oak: some held bourbon, and others are double-fired, meaning the wood has been given an extra heat treatment to draw more sweetness and spice from the oak. There is no sherry wood involved, so the whisky stays bright and fruity rather than rich and dark.
The higher bottling strength and lack of chill filtration mean the whisky keeps more texture and oils, and may turn slightly cloudy when you add ice or very cold water. That is normal. Pour it neat in a nosing glass first, then add a few drops of water to open up the fruit. It works with lighter food: grilled white fish, a herby chicken dish, fresh apple with a crumbly cheese, or a lemon tart. Balblair 12 suits drinkers who like a crisp, fresh Highland style, and anyone moving up from blends to single malt.
