The Mariinsk distillery is in the Kemerovo region of western Siberia. Beluga is made with malt spirit and cut to strength with artesian water drawn from deep Siberian wells. After filtration the vodka is left to rest for a period before bottling, which the makers say helps it settle and soften. That rest is unusual for vodka, which is often bottled straight after filtering. The result is a clean, rounded vodka built for drinking neat and cold, the traditional Russian way, rather than one designed mainly to disappear into mixers. Beluga belongs to Noblewood Group, and the brand takes its name from the beluga sturgeon of the Caspian region, famous for its caviar.
Keep the bottle in the freezer and pour it ice cold into small chilled glasses, ideally alongside food. Smoked salmon on rye, pickled cucumbers, herring, blini with sour cream or a little caviar are the classic matches. For a martini, stir 60ml with a splash of dry vermouth over ice and strain into a chilled glass with a lemon twist or an olive. It also makes a crisp vodka soda with lime. Store it sealed and upright, and a spirit at 40% keeps indefinitely once opened. A good choice for anyone who likes their vodka cold and served simply, or as a gift with a little more presence than an everyday bottle.
