Ruby is the youngest and fruitiest of the port-style wines. Grape spirit is added while the wine is still fermenting, which stops the yeast before all the sugar is used up. Ruby styles are then bottled fairly young, without the long wood ageing of a tawny, so they keep their deep red colour and fresh berry flavour.
