Corazón is Spanish for heart, a nod to the heart of the agave plant, the piña, that tequila is made from. The brand belongs to the Sazerac Company, the American spirits house behind Buffalo Trace, and that link shows in its special releases finished in bourbon barrels. This bottle is the core añejo, the oldest of the three main Corazon expressions above the Blanco and Reposado. Highland agave from Los Altos is known for growing in red, iron-rich soil at altitude, and tends to give a sweeter, fruitier spirit than agave from the lowland valley around the town of Tequila. A long rest in American oak layers vanilla, toasted spice and a darker, rounder texture on top of that fruit.
Pour it neat into a tasting glass or tumbler and let it sit for a minute before sipping, or add one large ice cube to soften the spice. It makes a rich tequila Old Fashioned with a barspoon of agave syrup and a dash of orange bitters. Food wise, try it with slow-cooked pork, beef barbacoa, mole or a square of dark chocolate after dinner. Whisky and rum drinkers often find aged tequila an easy step across, since the oak flavours feel familiar while the agave adds something new. A solid choice for a sipping tequila at a fair price, or as a gift for an agave fan.
