Four Pillars set out to make a gin that works as an antidote to bright, citrus-heavy styles. The recipe took around five years of experimenting, including a full year spent working out how to capture the aroma, flavour and texture of fresh olive. The finished gin uses three types of extra virgin olive oil plus olive leaf tea, with Mediterranean herbs such as rosemary and bay leaf, and Australian natives in macadamia and lemon myrtle. The olive oil gives the spirit a rounder, more textural feel in the mouth, while the herbs keep it fresh and green.
Next to Four Pillars Rare Dry Gin, the distillery’s all-rounder, Olive Leaf is drier and more savoury, so it is the one to reach for if you like a dirty martini, a Gibson or a gin that works with food. It is also a good bottle for anyone who finds floral or fruity gins too sweet.
Four Pillars pitches it first and foremost at the martini: stir it with dry vermouth and garnish with a green olive or a lemon twist. For a long drink, try a G&T with a light tonic, plenty of ice and a sprig of rosemary. Serve it with antipasto, marinated olives, grilled fish, salty cheeses such as feta or haloumi, or anything with a Mediterranean lean.
