Description
High West Bourbon is made by High West Distillery of Park City, Utah, by blending several straight bourbons. Each one has spent two years or more in charred American oak, and the finished whiskey is bottled at 46% ABV, never chill filtered.

Since opening its doors in 2006, High West has made blending its trademark. Rather than bottle one recipe, the team combines young, middle-aged and older straight bourbons to build a balanced whiskey, which it explains on its own Why We Blend page. The result is a bourbon that sits on the sweeter, corn-led side, with enough age in the mix for some depth. Skipping chill filtration and carbon treatment keeps more of the natural oils and texture in the glass, so it may turn slightly hazy over ice. That is normal.
High West’s own tasting notes:
Nose: Light caramel and sweet vanilla.
Palate: Earthy and rich, with candy corn, honey nougat and cornbread.
Finish: Vanilla, caramel apple and pecan pie.
Taste it neat, then add a dash of water to bring out the honey and corn. As a cocktail base it suits a classic Old Fashioned or a Whiskey Sour, and at 46% it stays bold over ice. Serve it with smoked brisket, cornbread and barbecue, or apple crumble. It suits bourbon drinkers who like a sweeter, softer style, and pairs nicely in a tasting with High West Double Rye.
