Joseph Cartron founded the company in Nuits-Saint-Georges in 1882, and his Double Crème de Cassis was one of its first products. The family still runs the business, with the fifth generation now in charge. Noir de Bourgogne is a small, intensely flavoured blackcurrant variety. Vats are filled two-thirds with fruit and topped with neutral spirit, then left for four to five weeks at room temperature. The infusions are decanted but not filtered, and the blend uses the first infusion with a little of the second to soften the fruit’s natural acidity. Crystallised sugar is added slowly and no water is used, which is why this is so concentrated. Next to a standard crème de cassis, the double crème has more fruit per bottle, so a little goes further in a glass of wine.

Make a Kir with 10 to 15ml in a glass of chilled dry white, ideally Burgundy Aligoté, or top it with sparkling wine for a Kir Royale. It also adds depth to an El Diablo with tequila, lime and ginger beer. Spoon it over vanilla ice cream, cheesecake or a berry pavlova. Once opened, keep it in the fridge and use it within about three months for the brightest blackcurrant flavour.
