Vine peaches are small, red-fleshed peaches traditionally grown among the vines in Burgundy. Cartron macerates the fruit in alcohol for around 10 to 12 weeks to draw out its flavour, then sweetens it to the richness the word crème implies on a French liqueur label. It is a regional speciality in the same family as Burgundy’s crème de cassis, made here by a house based in the Côte de Nuits. It suits anyone who likes a Kir or a Bellini, and cooks looking for a peach note in desserts.
Joseph Cartron describes it as:
Nose: Very elegant.
Palate: Round, with an oily, mouth-filling texture.
For a peach Kir, add 15 to 20ml to a glass of chilled dry white wine such as Aligoté or Chardonnay. Top it with sparkling wine for a quick Bellini-style drink, or add a splash to iced tea or a gin and tonic. It also suits poached stone fruit, peach melba, panna cotta and soft cheeses. Serve it chilled, keep the cap tight after opening, and store it upright away from light.
