Method & Madness is the experimental label from the Midleton team, and this gin was the first release from its micro distillery in 2019. Its still, known as Mickey’s Belly, has been at Midleton since 1958.

Black lemon, a dried lime used in Middle Eastern cooking, gives a sour, slightly smoky citrus note, while gorse flower, the yellow bloom from Irish hillsides, adds a sweet, coconut-like floral lift. The full botanical list also includes juniper, sweet and bitter orange peel, lemon peel, lemon verbena, coriander, cardamom, caraway, ginger, nutmeg, cassia bark, lavender, basil and bay leaf. That is a busy recipe, but the result still reads as a proper juniper gin, with more citrus and spice than a plain London Dry. At 43% it holds up well under tonic and ice.

Build a gin and tonic over plenty of ice with a twist of lemon peel or a sprig of basil or rosemary to pick up the herbs. It also makes a lively dry Martini and a Negroni with extra citrus. Pair it with oysters, smoked salmon, grilled prawns or a herby summer salad. It suits gin drinkers who already know the classics and want a distinctly Irish take, or for Midleton whiskey fans curious about the distillery’s gin.
