Description
Planteray Pineapple Rum is Stiggins’ Fancy, the pineapple rum created in 2015 by Alexandre Gabriel of Maison Ferrand with drinks historian David Wondrich. Made with Queen Victoria pineapples in two separate steps and then rested in cask, it is bottled at 40% ABV. You may still see it with the older Plantation label.

The idea came from history: pineapple rum turns up in Charles Dickens’ The Pickwick Papers, where the Reverend Stiggins has a soft spot for it, and the name tips its hat to him. Gabriel and Wondrich rebuilt the style from scratch. First, the pineapple rinds are steeped in white rum and then distilled, which captures the bright, perfumed side of the fruit. Separately, the flesh is macerated in dark rum for a juicier, riper note. The two are blended and married in casks before bottling. The brand moved from the Plantation name to Planteray in 2024, but the liquid is the same.
It tastes like rum first and pineapple second, rather than a sweet flavoured spirit, which is why bartenders reach for it. Use it in a Daiquiri, swapping some or all of the white rum, or in a Mai Tai or rum punch for a tropical lift. Easiest of all: pour 45ml over ice in a highball, top with soda water and squeeze in fresh lime. It also works with ginger beer, or in a Piña Colada with coconut cream. With food, try grilled pork, prawn tacos or a coconut dessert. It suits home bartenders who like tiki drinks and anyone after a fruit-forward rum that is not syrupy. Keep it sealed in a cool cupboard.
