The distillery sits in a converted farm building on the estate and was set up by Ian McCulloch and James Shelbourne. The team took its cue from the spring-fed pool itself. Production uses two separate macerations, one for the hardier roots, barks and spices and one for the more delicate floral botanicals. Both go into a copper still heated by a wood-fired boiler, with more botanicals placed in a basket in the neck of the still. Alongside juniper, the recipe includes kaffir lime leaf, lavender, chamomile, rose petals, elderflower, linden flowers, bergamot, bitter orange, pear and local honey, backed by roots and spices such as angelica, orris, cassia, cubeb and cardamom.
The result is floral and gently sweet, with fresh citrus running through it, so it suits drinkers who like an aromatic gin more than a sharp, juniper-only style.
The house serve is a classic gin and tonic: 50ml of Silent Pool, around 150ml of Indian tonic, plenty of ice and a twist of orange peel to lift the bergamot and bitter orange. A lighter elderflower tonic plays up the floral side. It also makes a fragrant martini, and pairs well with seafood, roast chicken, goat’s cheese or lightly spiced Asian dishes.
