Description
Tomatin 12YO is a Highland single malt Scotch whisky from Tomatin Distillery, in the hills south of Inverness. Tomatin calls it a triple cask whisky: it is matured for 12 years in ex-bourbon, ex-sherry and refill casks, and bottled at 43% ABV.

Tomatin’s first formal distillery was established in 1897, and the name is usually translated as the hill of the juniper bush. The distillery draws its soft Highland water from the Alt-na-Frith burn, which means free burn. For the 12 Year Old, Tomatin uses traditional Scotch whisky casks alongside ex-bourbon barrels and ex-Spanish sherry casks. The bourbon wood gives vanilla and orchard fruit, while the sherry adds depth and a little spice, so the result is smooth and gently sherried rather than heavy. It is unpeated in style. In the Tomatin range it sits between the younger Legacy and the older 14 Year Old Port and 18 Year Old Oloroso bottlings, and many drinkers treat it as the distillery’s everyday reference point.
Tomatin describes it as:
Nose: Wild heather, pine and cedar, which sweeten into crème caramel with apple, pear and mango.
Finish: Full-bodied and buttery.
Try it neat in a tulip glass, adding water a drop at a time if you want more fruit. It also works over a large ice cube or as a highball with soda. Pair it with roast pork and apple sauce, or a soft, buttery cheese.
