Description
Moutard Champagne Persin Blanc de Blancs is a non-vintage Brut Champagne made from 100% Chardonnay grown on a single parcel, Champ Persin, in the village of Buxeuil. It comes from the Moutard family’s estate in the Côte des Bar, the southern part of Champagne in the Aube.

The Côte des Bar is mostly Pinot Noir country, so a single-site Chardonnay from here is a little out of the ordinary. The Champ Persin vines are around 20 years old and are picked by hand. Moutard blocks malolactic fermentation to keep the wine fresh and citrusy, and after the second fermentation in bottle it rests on its lees for at least 36 months before disgorgement. Dosage is 8 g/l, a classic Brut level. The Moutard family runs about 22.5 hectares of vines around Buxeuil and also operates a distillery in the village, which uses fruit from the same Champ Persin plot for a marc de Champagne.
Moutard’s own tasting notes:
Nose: Fine mousse with delicate floral notes and almond.
Palate: Persistent, with lemon and grapefruit.
Finish: Fresh.
Serve at about 8°C as an aperitif, or a little warmer, 10 to 12°C, with food. The house suggests fish and seafood, baked fish, chicken in a cream sauce, or the local Chaource cheese. Moutard gives it around five years of cellaring potential, so it can be enjoyed now or kept a while. A smart pick for Blanc de Blancs fans who want a grower-style bottle from a less familiar corner of Champagne.
