Description
Pernod 700ml is the French aniseed liqueur from a house whose story begins in 1805 at the Pernod Fils distillery in Pontarlier. Today’s recipe dates from 1920 and is made from distillates of star anise, fennel and 14 other aromatic plants, including coriander and mint. It is bottled at 40%.

The original Pernod contained grand wormwood. The modern liqueur keeps the anise and herbs but uses very little liquorice, and the producer says that is what separates it from pastis, which leans more heavily on liquorice root. The result is fresh and complex, with star anise at the front and a bouquet of aromatic plants behind it. Pernod also makes a separate Pernod Absinthe at 68%, closer to the historic recipe, so this bottle is the everyday anise version. It suits anyone who enjoys aniseed flavours, and cooks who want a splash for seafood dishes.
The classic serve is one part Pernod to about five parts chilled water in a tall glass, with ice added after the water. It turns a cloudy pale yellow as the water goes in. Pernod also adds an aniseed lift to cocktails, works with lemonade or tonic for a longer drink, and a dash in the pan finishes mussels, prawns or a fish stew nicely. Once open it keeps well; store it upright and out of direct sun.
